In Season: January
After all that December indulgence, you may be looking for some lighter dishes to start the new year.
Although January isn’t the peak of the UK harvest, there’s still plenty of fresh produce available. If you’re looking to reduce your meat consumption, add some oomph to a classic cauliflower cheese by stirring through some chunks of roasted beetroot. Use the rest of the beetroot to make a beetroot and chickpea curry, perfect with rice or any other grain.
For the meat-lovers amongst you, venison is just coming into season. Roasted leeks, steamed purple sprouting broccoli and celeriac-mustard mash make the perfect sides.
