Banana Bread by Philippa Pellereau

8oz Bob’s Red Mill G F Oat Flour
2tsp baking powder
1.5tsp xanthan gum
1/2 level teaspoon salt
4oz Vegan Spreadable
6oz caster sugar
4oz sultanas/seedless raisins (Soak in water until needed.)
1oz chopped walnuts
4oz glace cherries (rinse under water to remove sugar coating, pat dry and cut in half)
2 eggs
1 1/2lbs ripe bananas

Sift flour, baking powder, xanthan gum and salt into a large mixing bowl. Add vegan spreadable and rub into dry ingredients. Add sugar, drained sultanas, walnuts and cherries & mix. Add eggs & peeled and mashed bananas. Using a wooden spoon beat all ingredients until a soft constituency, no extra liquid required. Line base & sides of a buttered 9x5x2 loaf tin with greaseproof paper. Pour in mixture and spread. Put into the oven for 1 1/2 hours at 210°c. Cool before removing from the tin.
